This particular lot is processed using the slow jam method, their own take on the traditional honey process. Cherries picked at peak ripeness are brought straight to fermentation tanks, where they are fermented until the mucilage becomes jammy. Cherries are then sent to depulpers, modified at the farm to remove the cherry skin without water use, and then set out to dry with the mucilage still intact.
